The structure of vitamin C is similar to glucose. It is a kind of polyhydroxyl compound. The two adjacent enol hydroxyl groups in the second and third positions in the molecule are easy to dissociate and release H+, so it has the property of acid, also known as ascorbic acid. Vitamin C is highly reductive and can be easily oxidized to dehydrogenated vitamin C, but its reaction is reversible. Moreover, ascorbic acid and dehydroascorbic acid have the same physiological function.
